Raw Sugar
Many varieties of Kokuto raw sugar from Okinawa This raw dark sugar is called Kuruzata in Okinawan dialect. In the postwar period it was the top agricultural product in Okinawa Prefecture. The manufacturing method calls for boiling down the sugarcane juice and crystallizing it with the addition of lime. A local lord, Shinjo Gima, dispatched retainers to China to study its manufacture. Sugar manufacture started in 1623 in the Ryukyus.
